Description

As the Luddite Saboteur White gains more following, we continue to grow this wine always keeping quality in mind. The main building blocks remain the same, namely Chenin Blanc, Viognier and Sauvignon Blanc. We felt the mid-palate needed more filling out and therefore blended some White Field Blend to the mix. The result is that the cultivars are too many to mention so we have gone with “White Blend” on the label.

Skin contact still plays a major role on the Chenin Blanc and Viognier to give structure, texture and a touch of tannin to the wine. As with last year, a portion of Chenin Blanc was tank fermented for extra freshness. The Sauvignon Blanc is whole-bunch pressed and pumped directly to barrel without settling to ferment. The barrel components spent 11 months in old French Oak barrels with regular battonage.

Once everything was racked and blended, the result was 69% Chenin Blanc, 14% Viognier, 12% Blanc Fumé and 5% White Field Blend. We hope that we have continued to achieve our goal which is to have a serious, well-structured yet refreshing fruity white wine. Easy to drink on the terrace and just as much fun with a serious meal.
